Re-cap of a Weekend at the Elkhorn Resort

I’ve returned home from my trip to Riding Mountain, but I figured I might as well somewhat keep track of what a health writer eats when she’s on vacation. Here it is!

Friday

Breakfast: green shake and homemade blueberry banana muffins

Lunch: Subway 6″ turkey breast sandwich on 9 grain bread with lettuce, tomato, mustard, cucumber, and green pepper (no cheese), plus 1 apple

Dinner: 1 glass red wine and the Mountain Grill Platter shared with the mother dear (I had pita chips with cream cheese dip, carrot/cucumber/celery sticks, 1 honey garlic chicken wing, and 2 chicken fingers with honey dill sauce)

Saturday

Breakfast: 2 poached eggs, 1 piece whole wheat toast with butter, fruit cup (watermelon, pineapple, banana, strawberries, grapes), and 2 pieces back bacon

Snacks: 1 Safeway sugar cookie, apple slices with smoky Gruyere cheese, part of a veggie tray (carrots/cauliflower/broccoli/sugar snap peas/cherry tomatoes), 2 glasses red wine

Dinner: 1 glass red wine, 1 whole wheat bun with smear of butter, 3 bacon-wrapped scallops, 1/2 piece garlic toast, baked rosemary cedar plank salmon with broccoli and baked potato (plus a taste of the mother dear’s Caesar salad, shrimp, and steak)

Sunday

Breakfast: apple with smoky Gruyere cheese

Snacks: Guiltless Gourmet blue corn tortilla chips, part of the veggie tray (carrots/cauliflower/broccoli/sugar snap peas/cherry tomatoes), dark chocolate, 1 Safeway sugar cookie

Dinner: 1 whiskey sour, Mountain Grill platter shared with the mother dear (I had 3 chicken fingers with honey dill sauce, 5 pita chips with cream cheese dip, and carrot/broccoli/celery sticks), plus half of a peach cobbler (shared with the mother dear)

Monday (today)

Breakfast: 2 poached eggs, 1 piece whole wheat toast with butter, 2 pieces back bacon, fruit cup (banana, kiwi, pineapple, orange, and apple)

Snacks: 1 Safeway sugar cookie, 1 apple, air-popped popcorn with Earth Balance and sea salt, Eat Right barbecue chips, another apple with smoky Gruyere cheese, dark chocolate with peanut butter, 2 rice cakes with almond butter and applesauce, and a sherry glass of red wine

It was rather an indulgent weekend, as you can see! But it was delicious. We did a good deal of hiking which involved trudging through snowy trails. It was a lovely weekend all around. Lots of munching and drinking 🙂
