– Green breakfast shake with 1/2 cup VitaCoco Pineapple Coconut water, 1/2 cup unsweetened plain Almond Breeze, 3 cups fresh spinach, 1/2 frozen banana, 1/2 scoop calcium powder, and the contents of 1 probiotics capsule (150 calories)

– 1 apple with 3 tbsp PB2 and 1 glass water (150 calories)

– 1 mug green and white mint tea (0 calories)

Spelt pancakes: I made 6 pancakes and had 4 with peanut butter and 2 with Earth Balance, plus 1/2 banana with PB2 and a few carob chips, as well as 1 glass water (600 calories)

– 2 vegan chickpea tacos (I used soft corn tortillas and substituted Bragg’s soy sauce for the tamari) topped with a little roasted red pepper dip, romaine lettuce, and tomato, plus a few sugar snap peas with roasted red pepper dip (400 calories)

– 1 mug green and white mint tea (0 calories)

– Sweet potato chips and 1 Yves chili veggie dog with homemade ketchup and 1/2 apple, plus 3 glasses water (600 calories)

Exercise: Strength Training (3 sets of 15 reps each): stability ball pikes, planks with knee raise, upright rows (using 8 lbs dumbbells), toe-touch crunches, floor kicks, and squat chops; Cardio: 1 hour 45 minutes walking
